Actually the easiest way is to take the brake line loose and leave the caliper attached to the wheel and then just bleed the brakes when you put it back on IMHO. You can also take the brake rotor loose and that will let the caliper move over enough to clear the wheel or you can take the bolts out of the caliper and seperate it.

Yes if you take the caliper apart you still have to bleed the brakes. The easiest and quickest way is to leave the caliper with the wheel and take the brake line off.

THere is no step by step on the tank install but really it is just like installing the factory tank using the manual with the exception of the extra skid plate.
