I've had the rear wheel off a few times, as well as the calipers. Never had to remove the brake disc from the wheel to do this. You should be able to rotate the caliper up and out of the way.
I think in the tech section I saw all the torque specs for the whole bike listed you can print and save them. Look around the site or do a search and it will come up.

Thanks Drew. On my 03 I can get the caliper off without removing the rotor, but with the Brembo caliper I couldn't get it off without removing the rotor.
Does anyone know the torque values for a 06 vrscaw?
